Recipe #48 Butternut Squash Soup [vegan]

Shopping list:


  • 1 medium onion
  • 2 potatoes 
  • 2 tablespoons of oliveoil 
  • 350gr butternut squash
  • Salt
  • Pepper

Method:

In a big saucepan heat the onion in the olive oil till it's golden. Add the vegetables in cubes and cover in water. Season and let it cool for 30 min. Pure it and serve with spinach leaves
