Recipe #71 Avocado Chocolate mousse

Ingredients:
-1 ripe avocado, 
- 1/3 cup unsweetened cocoa powder,
- 1/2 teaspoon almond essence, 
- 1 teaspoon of chia seeds powder, 
- 3 tablespoons dairy free milk, 
- 3 tablespoons of agave or maple syrup 

Place it all in a food processor with a chopping blade and blend till it's a smooth paste. No need for fridge, it's a great little snack to feed your chocolate crave.

PS: I made the chia powder by chopping a tablespoon of chia seeds in a strong chopping blender.

Recipe #61 Fresh Guacamole

Ingredients 

1 very ripe avocado,
4 mini plum tomatoes,
1/4 onion (or less, if you don't like onion taste),
1 tablespoon of lemon juice,
1/2 teaspoon sea salt,
1/2 teaspoon black pepper.

Blend everything in a food processor. Serve with tortillas or Doritos ! Cheap, easy, healthy and fresh ! :) enjoy!

Vegan Sushi

I never liked sushi. Never. The idea of raw meat is something that doesn't really make me salivate. Now, not eating meat at all, gives me a great excuse to not even to there. But I found vegan sushi, and oh it's good... Really good. I leave you with some pictures: avocado, tofu and cucumber sushi, cucumber and wasabi sushi and strawberry sushi covered in chocolate. The chocolate sushi is nice but it's somewhat strange to eat rice with chocolate, it's different but nice to taste the sweetness of the strawberry inside the sushi.

Recipe #43 Avocado Pasta Sauce [vegan]

Shopping list (5 portions)



  • 1/4 cup dairy free milk
  • Juice of 1 lime
  • 2 garlic cloves
  • 1 can of chopped tomatoes
  • 1/2 onion
  • 1 avocado
  • salt & pepper
  • 10 leaves of mint
  • 1/2 tablespoon of olive oil

  • You'll need a food processor


    Method 


    Place everything in the food processor and blend until it's smooth. Stir into the pasta, or filled tortellinis or whatever you like (over couscous).

    Recipe #41 Avocado & Coconut sauce [vegan]

    Great for pastas! Nice fresh avocado sauce, for 2-4 people depending on the amount of pasta

    Shopping list 


  • 1 avocado
  • Juice of half lime
  • 1 garlic clove
  • Fresh mint (about 10 big leaves)
  • 1/4 red onion
  • coconut paste
  • salt & pepper

    You'll need a food processor


  • Method 

    Use the chopping blade of the food processor. Peel the avocado, place the mint (with stem), peeled garlic clove, lime juice, onion and seasoning into the food processor. Turn it on and chop it as small as you can.
    Boil water in your kettle. Measure 100ml and place a package of coconut paste into it (not coconut oil, nor coconut cream, it's a paste which you should dissolve in 400ml hot water but here we will use 100ml only) and with a spoon break it apart till it's s liquid.
    Pour this into the food processor and turn it on for another couple of minutes. 



    You'll have a nice thick avocado minty sauce for your pasta!
